Make It GF's flour is a mixture of white bean flour, potato and tapioca starches and xanthan gum. White bean is the term the Food and Drug Administration uses to a variety of small white beans, including navy beans.

Beans or legumes are an important part of a healthy diet, but many people don't eat beans regularly. You know who does eat beans regularly? The healthy, long-lived people living in the Blue Zones.

The Blue Zones were investigated by National Geographic's Dan Buettner because in those zones populations have the healthiest longevity of any people on earth. A long life isn't the goal, a healthy long life is.

The Blue Zones ones are located across the globe, and each zone eats a very different diet, However, a constant in all the diets is the regular consumption of beans (also called legumes). Beans, including fava, black, soy, and lentil, are the cornerstone of most centenarian diets.

That doesn't mean that beans represent the fountain of youth or the key to longevity, but it does indicate that regular consumption of beans is a healthy part of every diet.

The American Heart Association also recommends regular consumption of beans as an important part of a heart healthy diet.
